Recipes - Poultry
Poultry is very often the old stand-by for the
home cook. It's
safe, inexpensive, and relatively easy to prepare. Well easy to
prepare, but maybe not always easy to prepare well.
Chicken in particular is one of the most versatile ingredients
around. It adapts well to a variety of flavors and cooking
techniques from sautéing to roasting to braising to poaching and
beyond. Most cuisines have some great classic chicken
recipes. Just think Chicken Parmagiana, Southern Fried Chicken,
Kung Pao Chicken, Coq Au Vin, Singapore Chicken Rice, Chicken
Enchiladas, and Moroccan Chicken Tagine to
name a few. But this list just illustrates the versatility of
chicken.
